Chilli Cheese Corn Toasties

When it’s pouring cats & dogs outside, all my heart desires is to gorge on some hot monsoon delicacies that goes well with my evening masala chai. It puts me in my utmost comfort zone. Mumbai monsoons have had a sudden come back in the last few weeks putting me in a complete gloomy lazy mood & craving for this Chilli Cheese Corn Toasties
Usually on Sunday’s when dad is at home, I prefer getting out for a while but with the rains we all are stuck indoors off late. I have two options, either sulk & get bored or do something about it. I am usually the person who would sulk over it as I am too lazy to cook when its pouring outside. But this time for a change I decided to make a great day out of it & made a batch of Chilli Cheese Corn Toasties for dinner & served it with piping hot soup. Who doesn’t love a bowl of comfort soup in this weather especially when you have something this yummy Chilli Cheese Corn Toasties to accompany it?

Ingredients

1 cup of Sweet corn, Boiled
1 medium Capsicum, Chopped
2 medium Onion, Chopped
1 tbsp All purpose flour
4-5 Cloves garlic, finely chopped
2-3 Green chillies, finely chopped
1 tsp Oregano
½ tsp Chilli flakes
1/4tsp Black Pepper
1 Cube Amul Cheese
1.5 cups Milk
1-2 tbsp Oil
1tbsp butter
6-8 slices of bread
Oregano/ Chilli Flakes/ Paprika/ Chopped Parsley for garnish
Salt to taste
Method
  • Crush boiled sweet corn in the small chutney jar of your mixer little at a time. You want this to be roughly crushed & not a paste.
  • In a pan, heat butter & 1tbsp oil & add onion, capsicum, crushed sweet corn & saute it for 3-4 minutes on high flame.
  • When the corn starts sticking to the pan, add the flour & saute it for another minute.
  • Add luke warm milk & continuously stir with a whisk to avoid forming any lumps.
  • Let it come to a boil & immediately add grated cheese, stir & let it simmer on low flame.
  • While it is simmering, in a tadka pan heat the remaining oil & add garlic to the hot oil.
  • Stir with a spoon till it starts changing colour & add finely chopped green chillies.[Make sure you switch on the exhaust fan before adding the chillies as they tend to directly hit the nose]
  • Add the garlic-chilli mixture to the corn mixture when the garlic start turning light brown & stir
  • Add oregano, chilli flakes, pepper & salt as per taste & let it boil on high flame till it is little thick. Do not cook it to a point where it becomes very thick.
  • Remove from flame & transfer the mixture into a bowl & let it come to room temperature.

This should be the consistency when you remove from the pan

  • You will notice that as it cools down, the consistency of the mixture becomes thicker.
  • Toast bread slices till they are golden crisp.
  • Spread the corn mixture generously, sprinkle your preference of garnish & bake for 2-3mins in the oven at 180°C
  • In case you do not have an oven alternatively you can toast it on a non stick pan with the lid on
  • Cut each slice diagonally into two or four pieces & serve hot with ketchup.
These toasties were wiped off instantly by my family & were such a hit that I have made them twice after the first time. These make for a great party snack as you can prepare the corn mixture before hand & toast bread slices to golden crisp state & keep them aside. At the time of serving all you have to do is apply the mixture, sprinkle your garnish & bake for 2-3 minutes & serve.
