I have this undying love for fondue’s. Be it sweet or savoury, it is always a crowd pleaser & works every single time. It brings everyone together on the table & serves as a great appetizer without much hassle. I personally think, appetizers that lets the host enjoy the occasion along with the guests are always a keeper. This Cheesy Makhani Fondue with Chatpata Pav Croutons, Butter Tossed Mushrooms & Fries is one such recipe. It comes together in no time & the spice blends from Tit Bit Spices are of great help.

Tit Bit Spices

I received a couple of spice blends from Tit Bit Spices & since Diwali is around the corner, I wanted to make something festive. I used the Veg Makhanwala, Chaat Masala & Sandwich Masala from Tit Bit Spices to make this recipe of Cheesy Makhani Fondue with Chatpata Pav Croutons, Butter Tossed Mushrooms & Fries.

The Veg Makhanwala Spice blend particularly came in handy as all I had to add to my gravy was this spice blend & salt. The Chaat Masala & Sandwich Masala mixed with oil/butter simply elevates the taste of the Pav Croutons as well. It gives it the right tanginess & saltiness to go extremely well with the Cheesy Veg Makhani Fondue.

Cheesy Makhani Fondue with Chatpata Pav Croutons, Butter Tossed Mushrooms & Fries

Ingredients for the Makhani Fondue

1 onion, medium (roughly chopped)

2 tomatoes, medium (roughly chopped)

1 tbsp ginger-garlic-green chilli paste

1-2 tbsp cashews

100 ml tomato puree

2tbsp butter, heaped

75ml cream

75gms processed cheese, grated

Salt to taste

1.5-2tbsp Tit Bits Veg Makhanwala Spice Blend

1tbsp oil

Pinch of Edible Food Colour (optional)

Method for the Makhani Fondue

Heat oil & saute onion till translucent pink. Add the ginger-garlic-green chilli paste & cook till a tinge of golden colour on the onion appear.

Add the tomato, tomato puree, cashews, salt. Cover & let it cook till soft.

Now add Tit Bits Veg Makhanwala Spice Blend & mix. Let it cook for 2minutes.

Add half a glass of water, cover & let it cook till the gravy is almost dry. Remove & let it cool.

Puree & strain the mixture to get a smooth sauce.

Heat the sauce again in a non-stick pan on low heat & add cream, cheese, butter & pinch of red food colour. Mix & let it cook till the cheese has melted & it has turned into a smooth thick sauce.

Remove in a fondue bowl & serve.

Ingredients for Chatpata Pav Croutons

4 Laadi Pav or buns

3tsp oil

½ tsp sandwich masala

¼ tsp chaat masala

Method

Cut the Pav or buns in bit sized pieces & spread on a baking tray.
Mix the oil & the masala’s & drizzle all over the pav & mix it to coat every piece.

Bake in a pre-heated oven at 160C for 10-12 minutes till it is golden & crusty.
