Christmas Plum Cake Recipe

Christmas is one time of the year that I have always been extremely excited & happy around. In fact, December gives those vibes to most people in the city, it has that charm about it. This year I made myself & my family proud by cooking up an entire Christmas feast. Off course the meal turned out fab & went great with my favourite Jacob Creeks Rose, but the finale was the Plum Cake which made the entire feast even better. I made this easy Plum Cake with super easy recipe by Chef Shreyas Shashidhar – Junior Sous Chef at ITC Maratha.
This recipe of Plum Cake comes together in no time & super easy & tastes amazing. Plum Cakes are a must on Christmas. The soaked fruits, nuts & spices is what makes it so good. If you want to make a Plum Cake without alcohol, you may soak the fruits in a mix of orange & grape juice with spices like cinnamon, nutmeg, star anise, vanilla & orange zest for at least two days & use accordingly. Plum cake
Ingredients
500gm butter
500gm sugar
10 no Eggs
500gm flour
12gms Baking Powder
1250 soaked Fruits
Method
Pre-heat the oven at 180C
Cream the butter and sugar in a bowl
Gradually add in the eggs one by one or else the mixture will split
Sieve flour and Baking powder together
Combine the flour mix and soaked fruits.
Combine it with the butter mixture but do not overmix
Fill it in the desired moulds and bake it at 180 degrees for 30 minutes
Serve it with snow sugar dusted on top
